Ingredients
  

Main Ingredients

  • 1 lb ground beef lean
  • 1 onion diced
  • 1 packet taco seasoning
  • 1 can enchilada sauce 10 oz
  • 1 can pinto beans 15 oz, drained and rinsed
  • 4 cups Fritos corn chips divided
  • 2 cups shredded cheddar cheese divided

Optional Toppings

  • sour cream
  • green onions sliced
  • diced tomatoes
  • jalapeños sliced

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch casserole dish.
  • In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is translucent. Drain excess fat.
  • Stir in the taco seasoning, enchilada sauce, and pinto beans. Simmer for 5 minutes.
  • Layer half of the Fritos in the prepared casserole dish. Top with half of the beef mixture and half of the shredded cheese. Repeat the layers.
  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  • Remove from oven and let it cool slightly. Top with sour cream, green onions, diced tomatoes, and jalapeños if desired. Serve warm.

Notes

For a spicier version, add chopped jalapeños to the beef mixture. You can also substitute ground turkey for a leaner option.
