Instructions
Preheat the oven to 350°F (175°C). Grease a 9x13-inch casserole dish.
In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is translucent. Drain excess fat.
Stir in the taco seasoning, enchilada sauce, and pinto beans. Simmer for 5 minutes.
Layer half of the Fritos in the prepared casserole dish. Top with half of the beef mixture and half of the shredded cheese. Repeat the layers.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Remove from oven and let it cool slightly. Top with sour cream, green onions, diced tomatoes, and jalapeños if desired. Serve warm.
Notes
For a spicier version, add chopped jalapeños to the beef mixture. You can also substitute ground turkey for a leaner option.
