Ingredients
  

Meat Mixture

  • 2 pounds ground beef 80/20 lean-to-fat ratio
  • 1 packet Italian dressing mix
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs lightly beaten
  • 1/2 cup milk whole milk preferred
  • 1/2 cup chopped vegetables optional, such as spinach or sun-dried tomatoes

Topping

  • 1/2 cup marinara sauce plus extra for serving
  • 1 cup shredded mozzarella cheese

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a loaf pan or line a baking sheet with parchment paper.
  • In a large bowl, combine ground beef, Italian dressing mix, panko, Parmesan, eggs, and milk. Add optional vegetables if using. Mix until just combined.
  • Transfer the mixture to the pan and shape into a loaf. Spread marinara sauce over the top.
  • Bake for 45-55 minutes. About 10 minutes before it's done, sprinkle mozzarella on top and return to the oven until melted and bubbly.
  • Check that internal temperature reaches 160°F (71°C). Let rest 5-10 minutes before slicing. Serve with extra marinara.

Notes

Customize with spicy sausage, extra veggies, or different cheeses like provolone. For a gluten-free version, use almond flour or gluten-free breadcrumbs. Meatloaf can be made ahead and frozen raw or cooked.
