Ingredients
  

Main Ingredients

  • 2 lbs Yukon Gold or Russet potatoes cut into chunks
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Optional Seasonings

  • 1 tsp garlic powder
  • 1 tsp rosemary dried or fresh
  • 1 tbsp Parmesan cheese grated, optional topping

Instructions
 

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  • Peel and cut the potatoes into uniform chunks. Rinse under cold water.
  • Parboil the potatoes in salted water for 5–7 minutes. Drain and let them air dry or pat dry with a kitchen towel.
  • Toss the potatoes with olive oil, salt, pepper, and optional seasonings.
  • Spread them on the baking sheet in a single layer without overcrowding. Roast for 35–40 minutes, flipping halfway through, until golden and crispy.
  • Optionally sprinkle with Parmesan cheese before serving.

Notes

Experiment with seasonings and try adding fresh herbs or a splash of lemon juice after roasting for extra flavor. For a healthier version, use cooking spray or an air fryer.
