Ingredients
  

Cookie Dough

  • 1 box strawberry cake mix 15.25 oz
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar for coating

Instructions
 

  • Combine cake mix, eggs, oil, and vanilla extract in a mixing bowl. Add food coloring if desired and stir until a dough forms.
  • Chill the dough in the refrigerator for 20–30 minutes to firm up.
  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Roll dough into 1-inch balls. Coat each ball thoroughly in powdered sugar.
  • Place dough balls 2 inches apart on the prepared baking sheet. Bake for 10–12 minutes until the tops crack.
  • Cool cookies on the tray for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra pop, roll in granulated sugar before powdered sugar. Store in an airtight container up to 5 days, or freeze for longer storage.
