Ingredients
  

Cookie Dough

  • 1 box Strawberry Cake Mix 15.25 oz
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 3-4 drops red or pink food coloring optional, for brighter cookies

Coating

  • 1/2 cup powdered sugar for coating

Instructions
 

  • In a large bowl, mix the cake mix, eggs, oil, and vanilla. Stir until the dough is thick and smooth. Add food coloring if desired.
  • Refrigerate the dough for 20–30 minutes.
  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Scoop dough into 1-inch balls and roll in powdered sugar until fully coated.
  • Place on baking sheet about 2 inches apart. Bake for 10–12 minutes, until edges are set and tops have cracked.
  • Cool on tray for 5 minutes, then transfer to a wire rack.

Notes

Chill dough to prevent flattening. Double coat in sugar for better crinkle look. Kids love helping with mixing and rolling!
