Instructions

Step 1: Marinate the Chicken

  • In a bowl, mix buttermilk, salt, black pepper, and cayenne pepper.
  • Add chicken pieces and coat well. Cover and marinate for at least 1 hour (overnight for best flavor).

Step 2: Prepare the Waffle Batter

  • In a separate bowl, beat eggs, milk, melted butter, and vanilla extract.
  • Gradually mix the wet ingredients into the dry ingredients until smooth.

Step 3: Fry the Chicken

  • Heat oil in a deep pan to 350°F (175°C).
  • In a shallow dish, mix flour, paprika, garlic powder, and panko breadcrumbs.
  • Remove chicken from buttermilk and dredge in the flour mixture, ensuring an even coating.
  • Fry each piece for 5–7 minutes per side, until golden brown and cooked through (internal temp: 165°F / 75°C).
  • Transfer to a wire rack to keep crispy.

Step 4: Cook the Waffles

  • Heat a waffle iron and lightly grease it.
  • Pour the batter into the waffle iron and cook according to the manufacturer's instructions until golden brown and fluffy.

Step 5: Serve and Enjoy

  • Place a fried chicken piece over a waffle, drizzle with maple syrup, and top with butter.
  • For an extra kick, add a drizzle of hot sauce or honey butter.
