Parfait Base

  • 1 quart yogurt Greek or plain
  • 1 vanilla bean split and seeds scraped
  • 1 cup dried apricots thinly sliced
  • 1 cup toasted pistachios
  • 1 cup pomegranate seeds
  • honey to serve

Instructions
 

  • Split the vanilla bean and scrape out the seeds.
  • Mix the vanilla seeds into the yogurt until well combined.
  • Layer apricots, pistachios, and pomegranate seeds in a glass.
  • Add a generous spoonful of vanilla yogurt and smooth it out.
  • Repeat the layers and finish with fruit, nuts, and a drizzle of honey.

Notes
